Can I use my own assets to start a nonprofit and if so what direction would you recommend I go being that I'm going this route as a self-starter...?

Yes, you can transfer your assets to a nonprofit, and kudos for your generous spirit! But, BUT, so many nonprofits struggle to fulfill their mission amidst the legal and administrative requirements.
I urge you to take your passion/concern (e.g., hunger, poverty, car collecting) and partner with an existing organization that shares your values. You would achieve more in the end I think.
