While transitioning out of the navy, multiple associates advised me to start doing informational interviews. However, at job fair, what I noted was the companies had recruiters that wanted my resume (NOTE: they were virtual job fairs.)

For any companies you have in mind, reach out to ACP to get you hooked up. For example, I have arranged informational interviews with my colleagues at Northrop Grumman.
They are asking for your resume so they can determine which roles, departments, business units, etc would be a good fit for you. Even for just an informational interview, a recruiter for say amazon with over 40,000 (that’s a real number) job openings on any given day will need to have some idea of your background before they can have a constructive conversation with you.

Great answers. If you are focused on a career, this will help. Be sure you state up front you are transitioning and seeking help in understand the "xyz" career field. You have had experience in that field, but want to better understand the civilian side of the market. Clearly make sure you are seek help and that you have a general idea of where you are interested in heading, but need that "help" to see if it matches what your experience has been. Be honest, most civilians really want to and like to help veterans, if you are sincere and not just buttering someone up to get at sending your resume, many people can smell that. Keep in mind you are coming from positions with a massive breadth of reporting, to careers that may be much smaller in size. Title does not mean anything like it does now, you can be a Director of a program at a medium size company, having only 12 reports and make 3x less than what a Manager with 5 reports at a big 4 position.

Good examples of “to the point” profiles are Mark Broc, PMP, SSGB, CSM and Jack Eisenhauer, Global Supply Chain. All have had long careers, but emphasized experiences and accomplishments that offer examples of the career they are searching for.
