Tom,
I'm not sure I understand your question. You are planning to be a mentor... not seeking a mentor?
Fit is most important, so I would suggest having a conversation about expectations to see if there is a knowledge and personality fit.
Regarding your second question; in career planning understanding where you are in your career development process will dictate questions you ask of others:
Initial career exploration to confirming what you have researched to better understand the role in different organizations and how it has evolved and is evolving.
There are informational interview questions online and responses to the same for most occupations.

Regarding the job interview: understanding your transferable skills and how they translate to the new job is key to an interviewer.
