I would like to retire this year. I would like the PT job in adult education at a junior college.

Hello Joyce. As you are interested in part time instructing and retirement, it looks like your financial goal is to just have some extra money. Sounds like a good retirement plan!
You didn't mention any particular subject, so I will assume you are quite flexible.
As you are near Huntsville, there will be many more opportunities for you. I would start off by googling "adult education programs Madison AL", or Huntsville. This should get you started.
Additionally: Sometimes local high schools offer night classes for adults or hobbies/interests. Same goes for libraries. Some businesses will offer classes, related to their products. (For example sports stores, like REI, offer classes in hiking, fishing, etc. Cabellas sometimes does also.)
If you have a particular skill you would like to teach, suggest this as a course. Possible ideas might be, a slide show of farm life for city slickers. Another might be opportunities for women in the armed services, or my experiences in same. These might be of interest to local high schools or libraries.
A local business may want to hire a professional instructor to give a class, regarding a new product line, or do demonstrations. I have seen classes in 'scrapbooking' and 'water coloring', at craft supply stores.
There are lots of paths for you. They may not make you rich, but they will enrich your retirement.
Thanks for your service, and enjoy your retirement!
