I recommend you obtain industry related certifications. Look at becoming a Certified Information Systems Security Professional (CISSP). ISC2 also offers a CISSP concentration for a security architect (CISSP-ISSAP). Degrees are important, but in technical fields, you need credentials that validate your expertise.

Regarding embedded systems, it will be helpful to have a degree in computer engineering to understand fundamentals of computer architecture. Regarding the information security part you could add a cybersecurity minor, or specific coursework in security, to that major. You can also look into organizations like the ones below to find training/certifications in many cybersecurity disciplines.

This is a new field, so I ask you, where do you want to work? I interviewed at https://fortemtech.com/ and had all the experience they needed. In the end, they still had no idea how to integrate to the market. If you are not building or supporting, you are selling. Where and What are the two questions you need to resolve. Build your battle plan from there.
