Hi I came across your post and I hope it is not too late for another answer. Best for your mentee to connect with associations and join some geography groups locally. Lastly, if they want to work in Geographic Information Systems (GIS) field, there are tons of jobs both within the U.S. government and within industry. Your mentee can also work in areas of higher education and work in an adjunct role to a professor and continue their learning.

Depending upon your location, I'd suggest that you seek Professor Assistanceships with universities and/or internships with companies that use geographers such as energy/oil companies. There are opportuniies outside of the US for these skills.
I would suggest that you point the person you are mentoring toward the Oil/Gas services field. There are companies such as Schlumberger that hire folks such as the person you are mentoring to be among other things, landmen. Here is their website:
