I have a very diverse career and educational background and believe I would be a good fit as a management consultant. I've spoken to several consultants who have stated that it will be difficult for me to become a management consultant without an MBA.

Thank you for your service -- management consultant is a very broad term and they do a very broad set of things. Without formal strategy experience (either in a role or with schooling), that may be challenging to break at a mid- to senior level.
That being said, there are management consultants who do operations, technology, HR, etc.

I suggest that you network at a target company or industry. Use LinkedIn to find people already working there and reach out to them. Ask them the process they used to get hired and ask them to help you navigate the hiring process and if they are willing, ask them to submit you as a referral. These activities require much more time on your part but in my opinion would greatly increase your chances for success. Good luck!
Pick a niche.
There are people who do not have MBAs with clients banging at their door if they can show results from previous projects in a specific area. I knew a fellow who was in demand across the country for setting up paint operations in auto body shops. That was his area of expertise and no MBA school would have taught it to him.
Jocko Willinkdoesn't have an MBA and he's doing just fine.
